Watermelon Slice Rice Krispies Treats


Two more days. We only have to drag ourselves through two more days before school is over and our summer can officially begin. Of course, the end of the school year involves wrapping up a zillion things including teacher gifts, which get hard once your kids hit middle school and they each have five or six teachers. After seeing a picture of Watermelon Slice Rice Krispies Treats on a Walmart flyer (of all places...) a few weeks ago, my daughter thought that these would make fun teacher gifts so we made a few batches over the weekend.

We found a recipe for Tangy Watermelon Rice Krispies Treats on Dine & Dish and switched it up a bit to keep the Original Rice Krispies Treats flavor (the original recipe makes lime and watermelon-cherry flavored treats). Not only will they be a fun part of our teacher gifts but they would be perfect for birthday parties and summer BBQs with friends!

Watermelon Slice Rice Krispies Treats

Ingredients
8 1/2 cups miniature marshmallows
6 1/2 tablespoons butter
11 cups Rice Krispies cereal
mini chocolate chips
red & green food coloring

Directions
Grease two 8-9" round cake pans and set aside

Make the Green "Rind"
*Place 5 cups of Rice Krispies cereal in a large mixing bowl and set aside
*Melt 3 tablespoons of butter in a large saucepan over medium-low heat
*Add 4 cups of mini marshmallows and stir until melted
*Add green food coloring (I used 8 drops) and stir
*Pour marshmallow mixture into bowl with Rice Krispies and stir until evenly blended
*Divide Rice Krispies mixture between two cake pans and, with greased hands, press the green mixture along the edges of each pan, forming a ring.

Make the Red "Melon"
*Place 6 cups of Rice Krispies cereal in a large mixing bowl and set aside
*Melt 3 1/2 tablespoons of butter in a large saucepan over medium-low heat
*Add 4 1/2 cups of mini marshmallows and stir until melted
*Add red food coloring (I used 12 drops - use more if you want it redder than mine) and stir
*Pour marshmallow mixture into bowl with Rice Krispies and stir until evenly blended
*Divide Rice Krispies mixture between the two cake pans and, with greased hands, press the mixture into the center of each pan.
*Once cool, sprinkle mini chocolate chips onto "melon" area and press them down to secure.
After allowing your watermelon to set for a few hours, cut it into slices. You can leave it in simple slices for serving at a party or add sticks and ribbon to the bottom for fun hand-held treats.
Since we're using our treats for teacher gifts, we wrapped each individual watermelon slice with plastic wrap and will give it along with a handwritten note of thanks (and a gift card for some).
They were easy to make and turned out so cute - we'll definitely be making more of them for summer get-togethers!
